Lady's Finger Stew
ingredients
1. lady’s finger cut both ends & gashed -250 gm
2. a. chilli powder-1 tsp
b. coriander powder-1 tsp
c. turmeric powder-1/4 tsp
d. salt to taste
3. onion sliced long -1
4. ginger-1 small piece sliced thin
5. garlic-10 flakes
6. a. 3/4cup coconut milk of first extraction
b.1/4 cup coconut milk of second extraction
7. tomato sliced-1
8. oil- 2 dsp
9. curry leaves-1 stalk
method
Mix little water with the ingredients of the second item. Spread it over the gashed lady’s finger and keep for sometime. Heat oil and fry the lady’s finger lightly and drain. In the remaining oil add onion, garlic, ginger, curry leaves and tomato. Stir well and as soon it is hot add lady’s finger. Add coconut milk of second extraction and boil. Then add thick milk, stir and remove from the fire. Serve with chappathies or rice.
