vegetable Thoran

ingredients
1. vegetables (carrot,beans,cabbage,cauliflower)- 350gm
2. turmeric-2gm
3. salt-5gm
4. mustard seed-2gm
5. curry leaves-2 sprigs
6. coconut oil-30 ml
7. grated coconut-80 gm
8. cumin seed-2 gm
9. chilli powder-5 gm
10. whole red chilli-2 gm
method
Clean the vegetables, chop it finely. In a pan, mustard seed,curry leaves,whole red chilli and coconut oil and broil together, till mustard seeds crackle fully. Add the chopped vegetable, sprinkle little water. Check the seasoning and cook with a covered lid till fully done. Add grated coconut and stir on open fire. Add little fresh coconut oil. Serve garnished with curry leaves and whole red chilli.
