Coconut Pudding
ingredients
1. grated coconut -1 cup
2. corn flour - 2 tbsp
3. vanilla essence- 1/2 tsp
4. sugar- 3 tbsp
5. cow's milk -1 cup
6. egg-2
7. grated nutmeg- 1/2 tsp
method
Soak the coconut gratings in milk for 1 hour. Put into a saucepan and thicken with cornflour (previously mixed with a little milk). Remove from fire. Add egg yolk and sugar. Stir well and flavour it with vanila essence and nutmeg. Pour the mixture into a greased dish and fold in, well beaten egg white. Cook in oven in moderate heat until set.
