Queen of Pudding
ingredients
1. coconut milk- 1 cup
2. egg- 2
3. sugar- 2 tbsp
4. vanilla essence - 1/2 tsp
5. white bread crumbs-3 tbsp
6. cashewnuts, kismiss and cherries ( chopped and roasted in ghee)- 10 gm each
7. gelatin- 1 tsp
method
Warm the coconut milk and soak the bread crumbs. Stir in to make a very thick sauce. Stir in the egg yolk beaten with sugar and vanilla essence. Put this mixture into a buttered dish and cook in the oven. Spread the roasted nuts and fruits on the top. Beat the egg white till stiff, adding little sugar, vanilla essence and gelatin(dissolved in small quantity of water by double boiling) and spread over the top. Keep in a refrigerator to set.
